| Those all sound delicious - but I think the BEST part about that dinner is having your DH do the cooking!

| Now, posts like these are what I LOVE to hear! This is what is going to keep you on track prfctlildvl!!!! Keep workin the plan girl!!! There is NO REASON for food to be boring or tasteless!!! Good for you on the peppers. I love the red and orange and yellow ones. Did you know they have more vitamin C than an orange does? And avacados and greens have more potassium than bananas? WOOHOO go veggies go!!

| I have a four year old who loved it and I think it woudl make great bite size chicken nuggets. My meatballs are all made and I've put them in the oven to get crispy before I let them simmer in a pot of beef broth. Can't wait for supper. I made enough to keep in a container for quick snacks. I could even put them in the microwave and add a bit of shredded cheese on top for a mini cheeseburger snack! I love taking recipes and trying to make them induction friendly. I think the majority of people who are not successful on Atkins just don't make it through Induction because they get in a rut with their food especially if you have a bit of weight to loose and do an extended induction. I have a recipe for chicken divan that calls for chicken breasts, broccoli, cheese and broccoli soup and bread crumbs so I'm thinking of trying that next by substituting shredded cheese and heavy cream for the soup and pork rinds for the bread crumbs. You usually serve it over rice but with enough broccoli you wouldn't need the rice. If anyone has any induction friendly recipes they'd like to share - send em my way. I love trying new things. |

| I use cauliflower as a substitute for rice. I steam it and take a fork and "shred" it until it looks like rice. I'll even put seasoning on it to make it taste like "yellow" rice.

| You can also make spanish rice and fried rice using cauliflower instead of rice
