| Mashed cauliflower, broccoli, sillygirl's spinach salad.. I think there's a fake french fries from jicama recipe that ValidRouge or Julirama would have... there's the fried rice made from cauliflower as well. depending on the beef (corned) there's cabbage.. oh, and i think the casserole's ok as long as it doesn't have a lot of onion...

| Here are some of my favorites: 1) Yellow "rice" (this is my DH's favorite) Steam a head of cauliflower until soft. Then take a fork and "shred" it into what looks like rice. You can add butter, salt and pepper and serve as "white rice" OR add a packet of Goya brand (Knorr makes it too) Sazon (seasoning) for yellow rice. Look in the ethnic section of your grocery store, or in the spice section. 2) Fauxtatoes--same steamed cauliflower, cooked until soft. Then add butter, salt pepper, a dash of cream and some cream cheese and whip with a mixer until creamy like mashed potatoes. I love this stuff. 3) Squash casserole is great--I'm on OWL. When you get to the nut rung, add an egg and some ground almond flour (ground up almonds) to "bind" your casserole. It's yummy. 4) Squash (yellow, zucchini) sauteed in olive oil and butter is a favorite here. 5) Broccoli alfredo--steamed broccoli. put some butter in a pan, sprinkle with parmesan cheese from the can, allow to cook a little, but not brown (this is like 30 seconds) and then slowly stir in cream. The cream will THICKEN alot, so just do it slow. It makes an excellent alfredo sauce.

| I like to put some butter in a frying pan and then add slices of fresh mushrooms and cook. Then add heavy cream and spices(salt/paper) to the pan. This is wonderful poured onto of pork roast, steak, chicken, etc. |

| I like to steam some asparagus, then in a pan heat up some olive oil and a tiny squeeze of lemon juice. When done streaming throw in the aspargus for 2-3 minutes. Take out three spears at a time and wrap them in prosciutto (spelling?). Really good. For an even richer flavor try putting a light spread of cream cheese on the prosciutto before wrapping the asparagus. ![]() ![]() |

| Grant, that reminds me.... Roasted Asparagus. Put the asparagus in a baking pan drizzle with olive oil and salt and pepper and bake in the oven. Yum. I love the tips when they are a little crunchy. Mmmmm Fried Green Beans. Deep fry fresh green beans like you would french fries. Yummy. Creamed Spinach--frozen spinach and cream cheese. Mix them together and heat.

I love to take zucchini, red and green peppers, cut into 1" chuncks with a bit of chopped onion tossed in olive oil, and put on a grill pan and cook on the bbq. Or you can also broil it in the oven. It also is excellent if marinated in italian dressing first, or if you sprinkel parmesan on after.
