| Soy pancakes would be legal during and after Rung 6 of OWL (legumes rung). Of course, if they contain wheat/grains they would not be legal until Rung 9 of OWL. I can guarantee they are not legal for induction, and in OWL, it would depend on the ingredients were legal for your particular Rung.

| RichT posted a link to his induction-legal pancake recipe the other day. Too late for Shrove Tuesday (officially 'pancake day' in UK). | Hi... Both my children were diagnosed with celiacs disease and are unable to eat anything containing gluten. Here is a soy pancake recipe that I made for my kids and they love it... 1 and 1/4 cups soy flour (I use Bobs Red Mill) 1 cup whole milk (if you want thicker pancakes use a little less milk) 2 eggs 1/2 tbsp baking soda 1/4 tsp baking powder 2 tbsp vegetable oil 1 cup mixed frozen fruit thawed ( I use the dole mixed fruit) Mix all ingredient together until smooth. Pour in small amounts on oiled or not stick griddle at 350 degrees. When top is bubbly, flip over. The pancakes will puff up, using a spatula I smush it down a little so that the pancakes cook faster and more evenly. Once cooked top with the warmed fruit and serve. You can modify the recipe to your liking. |

| That's a nice recipe. But it's not legal for the Induction Phase of Atkins.
