Sorry to hear about your situation with your relatives! All I can think of right now would be pepperoni, canned ham, tuna fish, and canned chicken. But if you didn't finish them you would have to refridgerate the leftovers or throw them out. I am not sure if tomato juice is legal I don't drink it. Hope this helps.

Food Item:Tomato juice, canned, with salt
Food Quantity: 1 cup
Carbs: 10.3g
Dietary Fiber: 0g
Net Carbs: 10.3g

Not sure I would waste 1/2 of my days carbs on 1 cup tomato juice. Im not sure if it's "legal" or not, but it is fairly high in carbs.

Could you get yourself a dorm-size fridge? You really do limit your selection if you can't refrigerate fresh veggies, meats, cheeses, etc., and being able to freeze meals and cook multiple meals at one tim is a big money-saver. In the short term, you could use a big cooler, but keeping stuff cold could be a hassle after awhile.

Some things can be kept at room temp a few days, such as fresh veggies like celery, onions, tomatoes, artichoke, avocado, cukes... some may need to be kept moist, obviously.
Spices, dried meats and veggies, and canned goods are no problem. Keep a close eye on serving size and carbs on the label. Avoid buying those with added starches and sugars.

The ingrediants in tomato juice are induction friendly (well, better check your label for your specific type) however juices in general are discouraged. The problem is that if you eat one tomato you get 2-4 net carbs and have all the goods things including fiber. However to get one serving of tomato juice you may have to juice up 3 or 4 tomatoes. That means that you are eating 4 tomatoes worth of sugar in one shot with none of the fiber. As Tony posted - 10.3 carbs per serving. Not only is that over half your allowed carbs for the whole day used in one little drink but you also have to contend with all that sugar rushing through your system causing sugar spikes.

Frankly its just a bad idea.

thanks i didnt realize that veggies could be kept at room temp, i guess it figures since they are refridgerated when they are growing outside
a dorm sized fridge isnt in my budget-the one i got was not made for "as the salesperson said when i asked when i had to return it" food it was more for canned soda and stuff like that.

the problem was when i had it on medium setting the veggies were getting bad fast(faster than they should) and when i put it on high it burned out its motor. weird sicne the picture on the box for the fridge showed veggies & even butter on it. so if what he said is true than thats false advertising, i would think...

Sounds like you were taken...must have been something wrong with that fridge. They should be capable of keeping 2-3 trays of ice (or other item) in the top, and the main chamber around 40, unless you open it a lot.

In any case, even a cooler chest containing a bucket refilled daily with ice (does family freezer have an ice maker?) can keep food sufficiently cold as a makeshift fridge. That's the way people did it before freon - they used an ice box. Even a makeshift cooler can be used in a pinch.

I'd take ice pak(s), freeze it, ant wrap my packages of food/drinks in layers of cloth and put in a beach bag to keep cold on day trips in a hot car to the beach, for instance. Ice is trickier, as it melts.

Agree with Britt997 on the canned meats - don't forget about canned veggies, as well (make sure to check the carb count). They have single serving cans, now - with pop tops that would be PERFECT for one person.

Are you able to cook, or are you relegated to doing the "Foraging/Hunting" diet? lol!
