| I don't know. But, OMG, I wonder about that too! Likewise, what if you cook a piece of meat, like fish, in a cup of white wine, and you keep it cooking until you are quite certain you have boiled all of the alcohol out of the wine. Are there any added carbs in that? Hopefully someone out there will have the answers to these questions.

| Onion is on the one cup a day salad veggie list. No idea about the whole soaking the onion thing as I would just put the onion in the soup and count it towards my veggie allowance. |

| I agree with MaggieB. Onions are an acceptable veggie.

| I believe that when you evaporate alcohol the carbs remain and a bit of the alcohol too. In induction I used to substitute wine (in cooking) with very diluted wine vinegar... like only a couple of teaspoons in a glass of water. Works well. Somehow, if you add the vinegar undiluted it isn't as good. Some of the onion carbs will leak into whatever you're cooking, even if you take it out...but I don't think it would be many. As onions are acceptable for induction, I think you'd be alright, with care.
