Default Yummy!!

Tonight I tried the "chinese pork fried rice" from Linda's low carb site. I was really, REALLY sceptical of making this because I hate cauliflour, HATE IT, and the main ingrediat in cauliflour ( to simulate the rice). But I must say it was sooooo tasty!!! Even DH was impressed!! I now have new hope for this diet because if the other potatoe and rice recipes that use cauliflower taste as good as this did, then I won't have such a problem giving up my beloved starches!!

For the longest time I was really, REALLY skeptical of the "fauxtato salad" recipe using cauliflower instead of potatoes. My goodness was I missing out!! That stuff is awesome! Basically, you just use steamed cauliflower instead of the potatoes in your potatoe salad recipe. I use dill relish and olives in mine with mayo and a hint of mustard. My aunt uses the splenda sweetened Mt. Olive brand 'sweet' pickles in hers. It's all up to how you like to prepare it.

Man...now I want fauxtato salad and I've already had it 4 times this week LOL

I also buy the Goya or Knorr brand Sazon seasoning for yellow rice and add it to my steamed cauliflower that I 'shred' with a fork. You probably did the same thing to make your dish....but, just add some butter or olive oil and that yellow seasoning. That stuff is awesome too. I use it for making chicken and "yellow rice".

This is very similar to what I make. I forgot about the boiled eggs. You gotta have boiled eggs LOL

I also like to make coleslaw with just cabbage, mayonnaise, salt, pepper, dill weed and celery ceed. Thats a very yummy side dish. I never liked sweet coleslaw anyway...yucko.

Ohhh, I use zucchini "noodles" instead of real noodles in Italian style dishes. I just take a potato peeler and peel an entire zucchini sqash into "ribbons" and steam them. Then I put my tomato sauce, meat and cheese on top. It's very yummy. OR even better, make an alfredo sauce out of butter, parmesan cheese from a can and heavy whipping cream.

Yes Linda's site is so awesome. I made the Sloppy Joes from it tonight and my family said they were way better than the usual sloppy joes we have and I agree. It's amazing how some things taste so much better now.
I was going to try the revolution rolls but I couldn't get my egg whites to form a peak. lol I've never been able to do that! so I wasted the last of my cream cheese and eggs.

I love making meals with Cauliflower too its amazing how many things it can emulate.

Woohoo for cauliflower being 'legal' on induction!!

I use mine mainly as a rice 'bed' for chicken curry (I grate it raw and microwave it) and for making 'duchess fauxtato' (steamed, mashed and mixed with cream cheese).

I havent used it for fauxtato salad as I usually use boiled radishes for this.

Beating egg whites can be tricky. I now use my stainless steel bowls (instead of Pyrex; and never plastic) and it helped a lot.
