I Remember Seeing In The Book That We Should Watch Out For Nitrates In Lunch Meat And Hot Dogs And Bacon , If Its Low In Carbs In Low In Sugar Wat Is The Big Deal With The Nitrates??

Dr Atkins said it was because nitrates are known carcinogens. I dont know if that is still a current accepted medical opinion or not.
