| Hi there! you should have a micro and fridge in the teacher's lounge. I made a crustless quiche from "linda's website" The link was somewhere here on ADBB. It's awesome. I can take 1 slice of that. Or I also made a taco salad (also from her site, but a no brainer- 1.5 cups lettuce, 1 scoop cooked meat (3 oz) with seasoning, 1 packet taco bell sauce, 1 oz sharp cheddar cheese- and it is great warm or cold-- depends on how you like your lettuce. I also take "roast beef bouquets" with roast beef wrapped around alfalfa sprouts. If you have room for more carbs you can pour parm dressing over the top (just 1 tbl should cover all of them a bit) which is yummy. I cut up a half red bell pepper or half avocado for my snack. I don't dip it anything but often I put 2 oz cream cheese on the red bell pepper!!! I also take a little thing of pepperoni (14 slices or so) but normally don't need to dip into that. Although its a nice alternative. And, finally, my coffee made at home. 0 carbs, 0 cal and it always gets me through until lunch in case I don't get a break.... as I haven't the last several nights. | If you look at the 'back to school' supplies in stores now, you should be able to find insulated lunch bags or small coolers. Freeze a bottle of water and that should be able to keep your foods/snacks cool until you eat them. There are also special containers available where the lids have a freezer gel in them. The lids are frozen and that keeps the food in the container cool/cold. Ideas for room temperature foods are: Vegetable salads: green bean salads, broccoli salad, cauliflower salad, etc. Veggie sticks and dip Hard boiled eggs Chicken, tuna, egg salad---if you use mayo make certain that the food is kept cool/cold to reduce the chance of spoilage. Leftovers from last night's dinner Chilled vegetable soups: chilled cucumber soup, chilled avocado soup, chilled zucchini soup, etc.
