Default Does anybody have a good induction friendly way of making chicken?

Hi All...
I have a bunch of boneless skinless chicken, and am out of ideas on how to prepare it. I have done the old lemon juice with olive oil, garlic and basil, and am way tired of it...

I'd love your suggestions!!!

I have a great recipe:
*Pre-heat oven to *350

2-4 boneless chicken breast
1 bag of Spinach
3-4 garlic cloves Chopped
2 tbs. olive oil
Fetta Cheese


*In a hot skillet pour in olive oil and the garlic. Only cook garlic for like 45 - 60 seconds long. Place spinach in and add a little water (or white wine when on rung 5) and cook mixture down. While that is cooking, take boneless chicken breasts, pound them out to 1/4 thick. Cut it in half horizontally. Take spinach mixture and place some on top of one breast. Crumble Feta Cheese on top of spinach and place the other breast on top. Put toothpicks thru stuffed breast and cook in the oven for 30-40 minutes @ 350*.

You can do the spinach mixture with any meat/ seafood....I love this stuff. It is a staple dinner in my house. The whole family loves it and it is induction and any phase of Atkins friendly. When you get to rung 5 you can ad some white wine to the spinach mixture for added flavor. Just a 1/4 cup worth will do and let it cook down with the spinach. YUMO!

I've done this with shrimp by just adding them to the spinach and the feta ch, I've done it with pork, chicken, fish, beef, even in the middle of a burger patty. Any left over spinach, add to an omlette. I have even added sundried tomatoes to the spinach.

Chicken and broccoli Alfredo!

Dice up your chicken when its raw. Heat olive oil and butter in a skillet and stir-fry the chicken and broccoli. Don't allow the skillet to get to hot to scorch the butter/olive oil though. When the chicken is almost done, add another tbspn of butter and then sprinkle paremesan cheese (stuff in the green can) into the mixture. The cheese will start to bubble a little bit. Don't allow the pan to get too hot. You don't want to scorch the butter/cheese. Then stir in a tbspn of heavy cream. This will thicken the alfredo sauce. You could also make the sauce separately and then add the chicken and broccoli. It's really simple...butter, parmesan cheese and cream.

There is nothing easier than crock pot chicken.
Take a crock pot, sometimes all I put in it is nothing.
Just set the chicken on low, come back in 6 hours, its delicious.
It is the easiest 100% induction chicken.

(you can put in salt, pepper, cayenne pepper, chilli powder...etc....)

YUM YUM...I'm so making this, and adding spaghetti squash too...Thanks so much

btw, is it bad if I've been eating spaghetti squash almost everyday for the past week? I can't help it, there is so much to do with it...mmmm

Sirine,

As far as I know the spaghetti squash is fine but limited to the 1 cup of "other" vegetables in addition to the 2 cups of "salad" vegetables. After reading about it on here I am gonna get some and try it soon!!

Parmesan Wings
4 lb chicken wings (or just a bunch of them...I don't measure)
1/2 cup butter
1 cup grated parmesan cheese
2 tbsp dried parsley
1 tbsp dried oregano
2 tsp paprika
1 tsp salt
1/2 tsp freshly-ground black pepper

First, preheat the oven to 350°F. Cut the wings up into "drummettes". (Freeze the pointy "tips" for soup -- they make great broth!) Then combine the grated cheese and the seasonings. Line a shallow baking pan with foil. (Do not omit this step, or you'll still be scrubbing the pan come New Year's Day!) Melt the butter in a shallow bowl or pan.

Dip each "drummette" in butter, roll in the seasoned cheese, and arrange in the foil lined pan. Bake for 1 hour at 350°F.


I can't remember where I got this recipe, but I can vouch that it's awesome! Hope you enjoy it!

I like to make chicken "taco's" with low carb taco seasoning, sour cream, avocado, shredded cheddar cheese, and hot sauce, and then I wrap it in a big lettuce leaf and eat it like a taco...Mmmm. Or I like to fry up cubed chicken with some mushrooms and seasoning, stir in some sour cream, and top with crispy bacon...kind of tastes like a chicken stroganoff. Both are sooo good.
