| My favorite breakfast is now one fried egg, topped with sliced chicken or turkey, topped with guacamole. I make homemade guacamole and slice up a bunch of chicken or turkey at the same time, so it only takes a minute to put it all together. I fry the egg in butter and warm the chicken on the other side of the pan at the same time. The hot egg and warm chicken warm the guacamole. Quick, filling and very healthy. I was having a hard time getting carbs in at breakfast, so the guacamole fills that need really well with tomatoes, garlic, hot peppers, lime juice and onion mixed in with the avocado.

| Things precooked like low-sodium bacon, sausage links, and hard-boiled eggs are some ideas. Just this week I had some deli ham and turkey with a slice of swiss, mayo, and mustard for breakfast. Also, grabbing a string cheese to go with a couple hard-boiled eggs works when you're short on time. Sometimes I like to cook things ahead so I just have to pop them in the microwave. Like on Sunday I may cook a whole pan of bacon or sausage in the oven and then eat it over the next several days. Then there's chopping up veggies like mushrooms and peppers to sautee with butter and add to scrambled eggs. I've also made breakfast x3 some morning and saved the other two servings for the next couple days. Then it's just heat and eat. I've found that there's not a lot of 'quick' anything with this WOE. During the week I spend countless hours preparing food, but the tradeoff is completely worth it! |

| I like scrambled eggs with cheese. Also crustless quiche is good. It can be made it advance and just heated up quickly.

| Think laterally for breakfast. We have kind of fixed ideas about what breakfast should be (eggs, bacon, sausage etc) but there are no rules. You can have lobster for breakfast if you like!!! I often eat left overs at breakfast, which sounds less interesting than it is. For example this morning there was some leftover burger and mushrooms from dinner last night, so I chopped up the burger, sliced up a green onion and stir fried the burger, mushrooms and onion together for a minute then stirred in an egg. It was very tasty and very filling. Left over chicken is excellent too, and pretty much any left over veg can be made into an omelette. In fact most dinner leftovers make good breakfasts and as they are already cooked only require minimal time to prepare. Most evenings now I make sure there will be left overs to use for a quick breakfast or lunch the next day. Not necessarily typical breakfasts, but they are good!

| You could always make a smaller muffin by splitting the batter into 2 or more mini muffins so you won't go over the 1-2 tablespoonsworth of flax allowed on induction for constipation prevention.
