I am going to go and buy Jicama after work and give it a try for one of my veggies.

I have never eaten it before or even heard of it.

Anybody have any suggestions on a good way to prepare it. Keeping in mind that I am on induction.

Peel the brown skin off it. Slice it, and eat it. I like jicama sprinkled lightly with lime juice, a bit of salt, and some chili powder. I also like to use it as a dipper for cream cheese or dips.

Some people cook it, but I don't find that preparation tasty or easy.

How about spices like allspice, cinnamon or it would throw the veggie's taste off.

I cannot eat lemon, lime, spicy foods, so I will have to revert to the other kinds of spices.

I think allspice and cinnomon would be very complementary. Brook (another member here) mixes cinnamon, almond extract and sweetner with cream cheese as a dip for jicama.

I prefer it raw and plain. Yum, yum. One of my favorite veggies.

After being on Atkins for a while, especially if you also do not use sweetners (i.e. splenda) you'll be able to start tasting a foods natural sweetness. Jicama is a root vegetable and it has a very earthy taste to it, but they can be sweet. The texture is like that of a raw potato or maybe even a radish, but the taste is like a not very sweet pear (in my opinion).

I finally found the stuff, learned to love it, and now can't find it anymore! I grew up eating raw potatoes as a snack, and that's what it tastes like to me. It's so crunchy and delicious.
