| These are good. Even the kids liked them. The counts at the end are not mine. They came with the recipe. Asian Grilled Chicken Breasts Recipe This recipe serves: 6 Preparation time: 5 minutes Cooking time: 10 minutes Ingredients 1/4 cup olive oil 1 tablespoon soy sauce 2 cloves garlic, crushed 1 tablespoon minced ginger 1 tablespoon Dijon mustard salt, to taste freshly ground black pepper 6 skinless, boneless chicken breasts Cooking Instructions 1. Mix the oil, soy sauce, garlic, ginger, mustard, salt and pepper, and brush on the chicken breasts. Refrigerate for at least 30 minutes or overnight. 2. Preheat the grill. 3. Grill the breasts for 5 to 6 minutes on each side, depending on the thickness. Let the chicken rest on a plate for 1 or 2 minutes before serving. | I got this from Linda's site. I did use 1 1/2 pounds of hamburger and 8 oz tomato sauce. Even my kids liked this one. SLOPPY JOE PIE 1 pound ground beef 1/3 cup onion, chopped, 1 1/2 ounces 2 stalks celery, minced 1 clove garlic, minced 1/2 cup tomato sauce 2 teaspoons granular Splenda or equivalent liquid Splenda 1 tablespoon white vinegar 1 tablespoon Worcestershire sauce 1 teaspoon mustard 1/2 teaspoon salt 1/4 teaspoon pepper 2 eggs 1/2 cup mayonnaise 1/4 cup heavy cream 8 ounces cheddar cheese, shredded Brown the hamburger with the onion, celery and garlic; drain the fat. Add the tomato sauce, Splenda, vinegar, Worcestershire sauce, mustard, salt and pepper. Mix well and let simmer, uncovered, about 10 minutes or so just to blend the flavors. Put the meat mixture in the bottom of a greased glass pie plate; mix in about half the cheese. Spread the remaining cheese over the top. Beat the eggs in a small bowl and whisk in the mayonnaise and cream. Pour the custard mixture evenly over the cheese. Bake at 350º for 30-35 minutes until nicely browned. Let stand 10 minutes before cutting. | Our desert tonite from Lindas site" CRUSTLESS KEY LIME PIE 1 small package sugar free lime jello 1/2 cup boiling water 8 ounces cream cheese, softened 1 tablespoon lime juice, one small lime Lime peel, finely grated, one small lime **1/2 cup heavy cream (see note below) Dissolve the jello in the boiling water, stirring for 3 minutes. Beat the cream cheese in a medium bowl with an electric mixer until smooth. Gradually beat the jello into the cream cheese (this will make a mess and splatter all over the place). Add the lime juice and rind. Mix the cream separately on high till stiff, then fold the lime mixture into it. Pour into a pie plate that has been sprayed with nonstick spray. Chill until set. | Cauliflower Hash Browns and Sloppy Joe Pie have my two thumbs up! I still am in love with the Oopsie Rolls. I made another batch today. The first batch used garlic powder instead of Splenda. My second batch uses lemon pepper. I also found that trying to double the batch didn't work so well as the egg whites "fell" before I could get the second cookie tray into the oven. But that's fine -- it will keep me from ODing on them!

| Okay..this one is basic I know. But it is a great one for the whole family. We eat it often. Sometimes I use romaine...most times a Spring mix. The kids don't seem to care either way. From Linda's site... Linda's Low Carb Menus & Recipes her counts. CHICKEN CAESAR SALAD 1 boneless chicken breast, grilled and sliced * 2 cups romaine, chopped, about 4 ounces 2 tablespoons Caesar salad dressing 1/2 ounce freshly grated parmesan cheese Combine all of the ingredients and mix well. Makes 1 serving Do not freeze * Marinate the uncooked chicken in a bit of Caesar or Italian dressing for several hours or just season with your favorite spices before grilling. Per Serving: 349 Calories; 20g Fat; 35g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs

| Okay....I took several recipes and mixed them up and this is what I came up with.. My version of stuffed mushrooms... 8 large mushrooms 4 stems 3 slices bacon 1/4 tsp garlic powder 1/4 tsp onion powder 1 oz cream cheese, softened 1 oz cheddar cheese Remove stems from mushrooms. Set aside. Dice finely 4 stems. Discard the rest or save for another use. Fry 3 slices of bacon crisp. Break into small pieces in a bowl. Add all ingredients except the mushrooms. Mix together. Stuff mushrooms. Bake on cookie sheet (use a piece of tinfoil for easy clean up) at 350 for approx. 15 minutes.
