I buy the boneless skinless breast and cut them into strips. I crush a bag of pork rinds, add 1 cup of parmesian ch. a half to 1 tsp. poultry seasoning. Then beat up an egg and egg bath the chicken and then roll them in the pork rind mixture pressing down on them to coat well. Then deep fry them. Sherri

| Ah, I just saw the nuggets questions! Sorry guys! Thanks for the answering Sherri! - Yep, just use egg for the "batter" then roll them in crushed pork rinds. Don't laugh but I used about 1Tbsp of Flax meal too to "umph" the texture a little since I *Prior to my new life on AD* used crushed stove top stuffing for breading anything. (Ever notice just how nutritionally insufficient that stuff is!?! Geez louise!) Awesome suggestions guys/gals!! I'm loving it!

| Oh, Andrea, I forgot to mention ... some people have said that you can use just grated parmesean (even the Kraft "pizza" type stuff) and it'll make a nice crunchy coating!
