I don't know what Sunny's secret is (but I bet she has one ) but what I do is to steam the wings before baking them. What that does is to partially cook them. This allows me to bake the wings on very high temperature for a short time - they come out nice and crispy and still cooked that way. Then roll them in some Frank's Hot Sauce. I learned this from Alton Brown on Good Eats on the Food Network . Here is a link to his recipe

I line the pan with foil and brush the wings with soft butter. I bake them at 400 degrees until they are brown and crispy, turning them and keeping them brushed with butter. I bake them at a high temp so they will brown and get crispy quickly, before the insides get dry. You have to have the skin basted with pure fat so they will get crispy.

I sometimes deep fry mine, but it is messy. I don't think it would be any more fattening, because the oil doesn't penetrate and drains off. We are supposed to be eating high fat. I also don't do it often because oil breaks down at high temps, and that is not healthy.

Tonight was a grilled burger, sliced fresh tomato out of my garden, red onion slivers and mayo. I also had ratatouille with all fresh veggies from the garden.

I had a revolution roll topped with 2 grilled chicken tenders, topped with red onion slivers, topped with avocado slices and a big glop of chili lime mayo. Awesome! I also had a plate of raw veggies.

I had a roasted chicken quarter and caprese salad - yummmmmm

I've been meaning to bake up another batch of oopsie rolls. I took them on my trip and they were a life saver. The made a great Italien beef bun (surprisingly!).

Talking of burger buns - the other day I had a nice juicy Aberdeen Angus burger topped with melted cheese served between two portobello mushrooms - it really tasted yummy and gave me the 'bun experience' without the bread. I never seem to get around to making Rev Rolls nowadays, and wanted a quick 'burger meal' rather than a knife/fork meal!

The mushroom burger bun sounds great!

We went to red robin a week ago and i asked for my burger bunless and they do a "low carb" bun. The take giant lettuce leaves and put your burger on a lettuc bun and they gladly replaced my fried with a side salad. Their Blue cheese dressing was delicious. I admit it was too much lettuce for one sitting - so i didn't eat all my "bun" But i thought it was great they were doing that! It was great option
