Default What's For Dinner Tonight????

I'm going out with friends to a steakhouse. So........you can guess what I'm having for dinner tonight and lunch tomorrow! (I usually cut my steak in half because restaurant portions are HUGE and eat half at the restaurant and bring the other half home.)

So what are YOU having?

I'm going to make faux lasagne - I'll be pan frying some mince beef with olive oil and onion, whilst gently steaming some aubergine (eggplant) and courgette (zucchini) ribbons. Will layer them in a dish with cheese, tomato sauce (basically chopped tomatos reduced) and bake in the oven. Hope it works!

What time's dinner you two??? Yum!

It's a toss up between chicken fajita salad w/left over chicken from last night or grilled steak. The steak requires me to leave the house to get the propane tank filled up----I don't want to leave the house. It's hot out there.

Chicken thighs baked. They turn out well when basted with butter throughout the cooking time (Julia Child: Here we come!!) Served with some crouton free caesar salad and rutabaga fries.
