| Nitrates have been associated with cancer. That's why Dr. ATkins said to avoid them. Also sodium may cause water retention. So if you choose to eat products with sodium nitrate, then be aware of this and don't overindulge.

| I find nitrates and excess sodium give me anxiety attacks. Since I cut out almost all the salt in my diet, I hardly get them anymore, but I REALLY have to read the labels on processed meats as sometimes something as simple as a single wiener can have my daily allotment of sodium!!! |

| They aren't good for you b/c they are linked to cancer like the pp said. I don't have a sodium tolerance issue. I have very low blood pressure and when I deny myself sodium I don't feel *right* I add deli ham and bacon to my menu options and have not had problems. When I can I avoid them...but where I am, I can't seem to find some options that still don't have sugar. Sodium Nitrates are used as a preservative and they are hard to avoid altogether
