Default two wk. induction complete

I finished my two week induction yesterday!
I have felt so many benefits already.
- much steadier blood sugar levels- no energy crashing or shaking and headaches if I get hungry
- I have more energy and stamina to get through the day -super important to me and top reason for doing Atkins
-cravings for sugary foods are gone
- my hips were always aching and that has stopped
-because of my higher energy level I am taking an interest in more things again.
-no brain fog
- enjoying eating healthy foods - I find it empowering
- discovering how much I really do like veggies and experimenting with new combinations
- losing 8 pounds in two weeks and I know I've lost inches too but have not measured since starting
-clothes are feeling less snug

I might stay on induction awhile longer as I am enjoying it and not feeling deprived.
I never thought I'd be eating cauliflower everyday and loving it!
M-m-m- creamy cheesy cauliflower - the pumpkin with butter and cream is delicious too - these are my new comfort foods at dinner - a little bit of both with some meat and a few other raw veggies or olives/pickles and I'm happy as could be

Found a good mustard too for variety to dip my meat into sometimes.
It's Maille Provencal - it is dijon with red peppers pureed in it.

Chiloe - wonderful post. So great to see that you have had all those great experiences already. I find that so many people tend to focus on what they are not getting on induction so this was great to read. Congratulations.

I'll echo liv's comments, for me it's the whole picture that matters. Those are the best rewards, for me, as you've said having enough energy to take up my interests again. Feeling empowered, I've not heard that said very much but you've said it and I'm really with you there. It's more than just feeling "in control". I'm only on week 2 so not sure if I'll do a 3rd, so far there are no cravings but I do eye the green beans in the produce stand, oh do I love steamed green beans! Good job, Chiloe!

Sounds like you are really of to a fantastic start. Cauliflower is good. I eat it almost everyday also. Yumm!

Hey, redfoxglove and tinytulip we all weigh about the same and it's nice to know that others are where I'm at. Mojo, you're ahead of us by 10 pds. so you are showing us that this works!!!
Nice to have such good support here.
Mojo, I pretty much follow the faux mashed potato recipe.
Mash or puree and add some cream and grated cheese and butter.
I don't really measure but I do use as little as possible of the cream and butter just to make it creamy and I'm careful with the cheese. And, I don't have too big of a portion. It's delicious!

Curious, are you limiting the cream and butter b/c of calories? I tend to be liberal with my fats b/c they are so satisfying. Just curious as to your method...

Well I do limit the cream to the suggested limits but I am pretty liberal with the butter as I only use butter on pumpkin and cauliflower so far. And I'm careful with the cheese as I use cheese at breakfast in my omelette and usually throw a little in my salad so I don't want to go beyond the 3-4 oz.
Since I haven't been measuring, I try err on the side of caution with the cheese. Once my kitchen is put back together and I can find my scale, I'll know just how much cheese to use.
