| First of all, if my understanding of your signature is correct, you are 10 lbs away from goal. If this is true, than you should definitely not do extended induction! That's for people who have a lot to lose, not <20 lbs. If you had a clean induction, move on after two weeks. Now to answer your question... For things like cauliflower, broccoli, spinach... stuff that can be cooked... you can keep them in the fridge for several days without any problems. Or you can cook them and eat some one day, and have the rest in the next. E.g., you can cook spinach for lunch today, and use the leftovers to make a spinach omelet tomorrow morning. As of green veggies that are meant to be eaten raw, I don't like keeping them in the fridge. Another thing you can do is freeze stuff. My grandma for e.g. has eggplant frozen for the winter (grilled I think, with the skin off, and in plastic bags). I suppose you could do this even if you don't want to keep things over the whole winter.
