Default Ricotta during induction?

Someone suggested eating ricotta cheese mixed with a little splenda for dessert. Is ricotta allowed? THe carb count is low - 1 carb for 1/4 cup.

Not that I remember. I'm about 99% sure it isn't legal on Induction. Sorry!

Indeed, ricotta is not allowed. It is a 'fresh' cheese. However, you can use cream cheese instead. Just be careful with the amount of sodium... cream cheese is usually pretty salty.

You can add it however at the dairy rung, which is OWL rung 2. It does make a fabulous desert! it's great also with unsweetened cocoa powder and splenda.

You know I was wondering what "fresh cheese" was. Dumb question, but why is is called a fresh cheese?

I'll be able to have that in two weeks! Yes, I can't wait to make this ricotta cheesecake with it!

fresh cheeses aren't aged. Aging removes more of the liquid or whey. The whey contains the lactose.
