| My assumption to this is that we're supposed to get more of our carbs from the veggies

| I've been doing extended induction for 5 weeks now, and I actually rarely use cream that much. I will use it sometimes when I have a pumpkin treat or whip it up for topping on some sugar free jello, but it's maybe a few times a week if that.

| Dr Atkins limited the amount of cream allowed on induction to those few spoonfuls plus an occasional extra amount as described in the 'special category' list because many people have problems losing weight if they eat more cream daily and he wanted us to maximise our chances of losing. And he told us to drop the extra 'special category' foods if they disrupt our losses. As Adam said, we are supposed to get 'most' of our carbs from our vegetables on induction.

| I'm not from your side of the ocean, but some stores in the US sell "heavy cream" as "whipping cream." A Tbsp has <1 carb and about 50 calories if that helps you choose. As to the maximum allowance, I would also guess it has to do with the fact that heavy cream is a calorie dense item. While we don't necessarily need to be counting calories on this WOE, there can still be too much of a good thing...
