Default American cheese

There seems to se a lot of misinformation about this food being passed around on ADBB in the last few weeks.

You can eat any aged cheese on Atkins not just the examples listed in the cheese section of DANDR read the words at the top of the box and you will see those are examples not the difinative list like the veggies,same for the proteins.

However as we all know American cheese in folks minds covers a lot of sliced yellow foods in the dairy case. Check your package carefully.
you will see every thing from American Cheese processed American Cheese, Processed American cheese food and processed american cheese spread. some toss in the word pasturized too.

BY FDA definition
Pasteurized process cheese is made from one or more cheeses, such as cheddar or colby, and may have cream or anhydrous milkfat added. The cheese is blended and heated with an emulsifier—typically a sodium or potassium phosphate, tartrate, or citrate—and other optional ingredients such as water, salt, artificial color, and spices or other flavorings.
The cheese is then poured into molds to solidify and is later packaged. This processing produces a smooth, mild-tasting cheese that melts easily. For pasteurized process cheese, the final product can have a maximum moisture content of 43% and must have at least 47% milkfat. pasteurized process American cheese is made from cheddar, colby, cheese curd, granular cheese, or a combination of these; when other varieties of cheese are included, it must be called simply American cheese. Both of which are Atkins legal!

Pasteurized process cheese food is a variation of process cheese that may have dry milk, whey solids, or anhydrous milkfat added, which reduces the amount of cheese in the finished product. It must contain at least 51% of the cheese ingredient by weight, have a moisture content less than 44%, and have at least 23% milkfat. This is not legal as the dried milk can have lactose, a sugar, in it


As you can see that dairy case can have many yellow sliced chese type things in it, but not all sliced yellow cheese is a cheese food nor spread like velveta. that is the wording you want to avoid. The cheap yellow stuff will say cheese food the more expensive yellow stuff will say. And don't even go near the imatation cheese in there.

Hi 2big4mysize,

Thank's for clearing this up I've been confused about this as well. So many changes were made regarding cheese over the years since I was on Atkins myself - if I remember from the book that had been passed down to me from my mother about 7 years ago cheese was a "free food" and macadamia nuts were allowed on Induction!

Of course now the diet has been refined in so many ways - for the better

As the great Mya Angelo saying Oprah is always quoting goes When you know better you do better. Dr Atkins learned from his patients and those that wrote to him and called his Center that portion control of those two foods wasn't what he had thought we would all be able to achive on his program so he just created portion control for us and made changes. As he said he picked under 20 because over 90% of the folk starting his plan would in 14 days have a successful weight loss doing his induction program.

Isn't there a rule that if it ends in cheese, then it's cheese. But if it ends in product or spread or something then it's not cheese? Just wondering if that's true (would make things alot easier for me)?
