| There is no reason why you have to eat salads. This is not a "eat salads" diet. You have eat under 20 carb of veggies from the allowed lists but how you prepare them is up to you. I often stir fry my veggies.

| Also Dr. Atkins NEVER writes that the veggies on the "salad" list must be eaten raw. I think some of the veggies on that list, like bok choy and mushrooms, taste much better cooked than they do raw. Same goes for the peppers. I think sauteed or roasted sweet red or yellow peppers taste much nicer than raw peppers.
