Default Re: What's For Dinner Tonight?

My gf made me her version of tuna salad... and it was amazing.

I've never had tuna prepared any other way but with mayo and dill relish and possibly a little mustard, so this was an awesome first for me:

tuna, canned drained
2 Tbs. Mayo
3 Tbs. Mustard
1 Celery stalked, de-stringed, chopped up
1/4 c. diced onion
1 string cheese chopped up
Jalapeno slices (jarred, not fresh)
Cajun Seasoning

All mixed up and SO friggin' tasty!! Yummy!

I had the leftover shrimp last night, but re-made it as a shrimp salad. Tonight, I'm going to use this soup recipe: http://www.atkinsdietbulletinboard.c...up-my-way.html (Instant Vegetable Soup My Way) and add some leftover shredded pork to it. (It's cold and rainy here!)

Default Re: What's For Dinner Tonight?

Tonight - Chicken Alfredo with Broccoli. MMMMM!
I love this dish, it's really easy to make and my family LOVES it too!
I cut up and brown some bacon, onions and mushrooms (not a lot). Then I add the chicken breasts and sprinkle it with Italian seasoning and garlic. Once the chicken is browned I'll cover it in an alfredo sauce (about 3 carbs per serving) and cook on a lower heat until the chicken is done.
While my family puts some of the sauce over the fettucini noodles I make for them, I'll cover my broccoli. Scrumptious!!

And I love a leftover chicken for breakfast!
