Default Need Breakfast and snack ideas

Hello everyone. I'm new to the boards here (although I have been a lurker for sometime now.)

My wife and I started Atkins on Jan 5. I am doing well and I think on the way of getting rid of the induction flu. My wife on the other hand, not so good.

I've been on a low carb diet a long while back and I know it sucks at first. She is having a hard time adapting. I need to find some good meals for BREAKFAST and a snack that she can do. I just do hard boiled eggs in the morning (i love them) but she doesnt. We dont have tons of time during the week to cook breakfast, but I suppose I could always make it the night before. Any ideas for breakfast that can help her out and make this easier for her?

Also, as far as snacks go, we have be doing string cheese, celery sticks, and raddishes to name a few. Any snack ideas that can maybe make it better and maybe more exciting for her?

Ive got great dinner meals... its just these two I need help with. I know I am fine, I just dont want her to give up!

I pre cook breakfast sausage so in the am I just heat it up. Also Quiche is really easy to make keep in the fridge and reheat a slice as needed.

That is where I most of my dinner meals. Not having much luck finding quick meals for breakfast though.

I never toticed the snack portion... I will search through that as well

One Minute Muffin (Muffin in a minute)
Breakfast Bowl-ritto (Breakfast: Induction-friendly Breakfast Bowl-ritto)
Breakfast Casserole (Breakfast casserole, induction friendly)
Mock Cream Cheese Danish (mock cream cheese Danish)

Those are just a few from the Main Dishes recipe forum. There are plenty more ideas there too!

If you have left overs from the night before, your wife can eat those.

Breakfast ideas:

I eat a lot of left overs from night before
chicken salad, tuna salad
scrambled eggs and bacon
omelettes
fried eggs with sausage

Snack ideas:
Cheese and natural deli meat (meat and cheese roll ups)
cucumber slices, pepper slices, radishes, celery - dip in ranch, sour cream or cream cheese

I put 3 eggs to boil the minute I hit the kitchen every morning, its fast & simple, I have time to eat before I leave the house. If my fiance wants a nice breakfast (normally on weekends) I cook it and take some bacon with my eggs.
If I have some ham, I do a ham cheese bell pepper scramble (Omelets never turn out for me, Im not fancy!). We also do Breakfast for Dinner some nights!
