Hi - I hope everyone is having a great weekend - I just wanted to share with the newbies like myself a snack that I discovered for myself, which is really nothing new but wanted to put it here just in case any of you guys were looking for something to help you through. I went to the grocery store and bought parchment paper (near the aluminum foil) because you can bake things like cheese on it and it doesn't stick and I bought shredded parm/romano cheese (real kind in deli, not the powdered kind). I laid the parchment on a cookie sheet, set the oven to 350, and measured out my cheese (2 oz tonight) and then seperated it into 6 little mounds and flattened the top with my spatula. I baked them for about 5 minutes (until they get lightly browned) and made a dip out of part blue cheese dressing, part sour cream (1 tbsp each). The result = AWESOME tasty 'chips' that I thoroughly enjoyed that kept me from having those weekend real chips, snacks, etc. I'm slowly learning all of this and was very happy to have discovered how easy these are and how satisfying especially on the weekends, which is not easy. That sounds awesome. I do much the same with sliced cheese and I nuke them, but they often turn out runny in the middle. Cleo had the idea of making a big bowl with the cheese and using it for a taco salad.

I love that 'bowl' idea...I will have to try that. I'm just learning as I go and keep trying new things - the more I do I am realizing there is a lot you can do besides just eating scrambled eggs and turkey burgers all day

The simplest way to make a bowl of cheese is to cook it as a large circle (you can even fry it if you dont have a microwave) then lift it and drape it over a bowl or dish so it hardens into the shape. And no washing up after the meal too!!

You can make taco shells by using a rolling pin or similar setup to drape it over.
