I tend to prefer my veggies raw and end up having my calories around 1000 and my fats nowhere near where they should be, so i've had to consciously start cooking my veggies in butter and adding extra fats to my salads to get it up, because if its too low, even if i'm doing well with what I eat, I won't lose weight.
