Default Cilantro Dressing

Wanted to share with you guys a cilantro dressing that I love and is totally induction friendly. Its a great alternative to Ranch and goes great with a shrimp and lettuce salad! Yum. Especially if you grill the shrimp with garlic!!

1 cup of mayo
1/2 bunch of cilantro
Lime Juice (to your taste) Watch for carbs!!
Salt to taste

P.S. I usually use about half a lemon for the whole thing and it lasts me for about 3 servings. So its very litle carbs total. I also add a bit of water to thin out. Depending on how thick you like yours.

Oh, THANK YOU! I saw cilantro dressing in the store on Saturday but I did not get it because it had sugar added. This is perfect timing as I need to add some fat into my diet - thanks, again!

That sounds delicious. I bet if you can use other fresh herbs like parsley, rosemary, basil, etc. if you don't particularly care for cilantro.

BTW, you can thin out the dressing with a neutral flavored oil too. Or give it more cilantro flavor by infusing that oil with cilantro first!

Thanks, Cindi!!!

And thanks Not2Late for the tip on thinning it out. I bet grapeseed oil would be good for that.

I haven't experimented with making my own dressings yet. This will be fun to play with!

One of my favorite dipping sauces for fish or chicken is simply mayo mixed with lemon juice and alittle olive oil. The bright lemony flavor contrasts nicely with chicken or fish.

I personally dont like oil based dressings, and mayo already has a lot of oil so for me it would be too oily but whatever floats your boat!

Since Atkins is a high fat diet, that little bit of oil is good additive, especially with leaner meats like chicken or fish.

This sounds good! I love cilantro and anything with lime juice...oh the smell of lime makes me crazy happy! Or maybe its the tequila that usually goes with it

Thanks for sharing!

I agree! However I get plenty of fat with my bacon, burger patties and butter LOL
