| Yes, jicama is a salad vegetable. Salad vegetables are limited to 2-3 cups per day, depending on the amount of veggies you have from the "Other Vegetables" list. The two lists are here: http://www.atkinsdietbulletinboard.c...induction.html (What foods can be eaten on Induction?)
