Default Throwing out the scale!!

Haha...I bet you thought this was going to be a whiny "how come I didn't lose even though I only cheated a little bit" thread. NOT SO! I'm so excited right now.

The scale says I've lost about 10 lbs in the first 2 weeks. I'm cool with that. What I'm MORE excited about is seeing the INCHES drop! Woot woot!

Since I know muscle weighs more than fat, I'm going to just not even weigh for a couple weeks. I'm just going to take measurements each Friday.

Here are my before/after measurements:

Neck........14....12.5
Bicep.......14....12.5
Forearm....10.5...10.5
Chest.......41.5...39.5
Waist.......41.....39.75
Hips.........46......45
Thigh.......28......27.5
Calf.........16......16

I can feel it in my chest because my bras fit better and I can feel it in my waist because my pants are a little more roomy.

I've been browsing the site for more ideas about recipes for veggies...I know I need more veggies!! I can currently handle jicama (my fav!), broccoli, tomato & romaine lettuce. But I'm bored with them. I'm working on cucumbers (only like them fried at the moment, pork rinds worked the best tonight) and califlower (tried a couple mock recipes but just didn't turn out well). If anyone has some suggestions, I'm open to hearing them!

Great progress

Have you tried using cauliflower as subsitute rice? Just grate it raw then microwave till softened and use as it is with curry sauces or add it to stir-fried rice recipes. My husband actually prefers caulirice to 'real' rice now as it doesn't make him feel bloated!

Another thing I do with cauli is to make a rich cheese sauce (4 ounces shredded cheese, 1 ounce cream cheese and 2 fluid ounces of double cream just melted together) and add it to cooked cauliflower then bake it as cauliflower cheese either as a main dish or a side dish.

ooohhhh...thanks for the suggestion elizellen, that sounds good. I actually made some loaded cauliflower tonight, it was great! I'll have to try it with the cheese sauce tomorrow!
