I am on day 4 of Induction...

this morning I ate left over sausage and bacon I cooked the day before. Cold but good. I find fixing things ahead makes it far easier.
I do that for lunch/dinner as well. Like a huge pot of soup with ground beef..been snackin on it for 3days! MMMMM

Good luck!

i bought this neat little bag from the dollar store that you store veggies in and its supposed to keep them fresher longer...so far so good.. so i've been cutting up all my lettuce and salad veggies when i bring them home from the store so when i need something quick i just whip up a salad and go.. i also found those individual salad dressings...there so handy. there Renee's brand so i think its 1 carb for every 2 tbsp. im thinking of buying a huge pack of chicken breasts and cooking them all off and slicing them up and portioning out a few ounces each and freezing them...

when i'm in a hurry, my breakfast is usually pumpkin w/ a packet of splenda & some cinnamon. sometimes i'll add a pat of butter or an oz of cream cheese with the pumpkin. heat it up for about 30 seconds and it make a great little breakfast. the mock danish is a quick little breakfast dish too, takes just a couple minutes to make from start to finish. i even add a little pumpkin to the mock danish sometimes to switch the flavor up a little bit.

here's the link for the mock danish- Linda's Low Carb Menus & Recipes

Another really good way to prepare the mock danish is if you use lemon extract rather than vanilla- tastes like a lemon tart. Amazing texture, too.

As for my breakfast if I'm in a hurry I have a microwave egg-poacher- you put two raw eggs in each pouch, close the lid, and nuke for about 2 minutes. Bam! If you sprinkle it with some light cheese it's amazing, and if you quickly stir-fry some bacon on the stove while those are going it's even better together. Just thinking about it's making me hungry LOL.

My quick easy breakfast is to take some slices of ham and gouda cheese and roll them up together. Rollups with some cherry tomatoes or raw sweet red peppers make a tasty start to the day with fat/protein/carbs

I do what Eliz does: grab cheese and some kind of protein, like a boiled egg, leftover chicken, etc.

Cherry tomatoes and a few shards of parmigiano reggiano when I'm in a rush!

A couple of Babybels and some ham. find it much easier to make mini crustless quiches the night before though - they take about 20 minutes including prep and even when I'm absolutely shattered I make them up quickly and then feel relieved I did the next day!
