turkey meatloaf with sauteed spinach is my favorite...also like baked chicken that I top with parmesan or garlic mushrooms

Parmesan fried chicken strips, extra crunchy! Mmmmmmmmmmm

Took me awhile to get the hang of making them crunchy, but I've got it now!

grilled steak with onions sauted in olive oil is my favorite!

bacon and eggs for breakfast

cheddar cheese for snack

all my favorite stuff.

Default Love da crab

crab quiche
sprinkle crab on the bottom of a casserole dish
blend 3 eggs, 1/4 cup heavy whipping cream
and 1/4 cup swiss cheese
couple of shakes of parmesean
bake for 12 to 18 mins


and the ever versatile mock danish:
1 ounce of cream cheese
1 egg
1 sprinkle of cinammon
1 splenda
1/2 teaspoon of flax
mix with beater - nuke for 120 - top with a little butter

I posted this in the other thread as well

Fauxjitas

Grilled chicken breast ( beef or pork if you like)
Large lettuce leaves
avocado
chopped green onion
chopped green or red peppers
lemon juice
sour cream

Slice the grilled chicken and squirt with lemon juice. salt and pepper. Put it in the center of a large lettuce leaf (Boston or Bibb lettuce does a good job). Put some chopped avocado, green onion, and peppers on top. Slather on some sour cream. Roll the sides of the lettuce leaf up and eat.

Wraps
Ground meat sauteed with onion, garlic, herbs and spices of your choice
Lettuce leaves

Put a few tablespoons of the cooked ground meat mixture into the lettuce leaf. Fold up the sides and eat.

This dish is really great because you can vary the taste by varying the spices and herbs you use. Use taco seasoning or chili seasoning for "taco" wraps (and of course add on the cheese, sour cream, salsa, etc.), for a Southeast Asian flavor add ginger, soy, hot chilis and wrap, for an Italian-American flavor add basil, rosemary, parsley, oregano and parmesan or mozzarella cheese, for a "Philly cheesesteak" flavored wrap, use onions, cheddar cheese, (maybe mushrooms, if you like that). The possibilities are pretty much endless. You can also vary the ground meat: use ground chicken or turkey or even use tofu.

A thick juicy steak, Cab rib eye or nice thick Filet mignon medium rare, Broccoli Rabe (Italian boccoli) or baby spinach sauteed in olive oil, butter and garlic, a cup of green tea and ice water with lemon ~ Yum!

So far, it's a filet mignon with bleu cheese, made "crusted" under the broiler. Argllllllllllllllllll, so yummy.

Hot wings with raw veggies and blue cheese dressing to dip it in!!!

OMG! Happiest day of my life when I found out that was totally allowed...lol No more feeling guilty about the fat in the chicken wings!!


and a fave that has stood the test of time (next to boiled eggs) is a hamburger patty. Either cold (yes, I like quite a few things cold) or sliced in half, with a piece of cheese sandwiched in the middle, and either eaten cold or nuked till the cheese melts a bit.
