Default Breakfast help!

running around like a loonie in the morning to get two kids out for school, one adhd and needs a bit more egging on. I don't have time to play with bacon and eggs, and usually it was weetabix or something thrown in a bowl. Any ideas on what I can eat on the hoof as I drive off to work?

My easy to prepare and have handy for quick meals and/or snacks is a crustless quiche.
Made from eggs/cream/cheese with added cooked veg and/or meat they can sit in the fridge ready to grab'n'go and can be eaten hot or cold.

The recipes I use are in the recipe database linked from my signature but you can add almost any ingredients to the basic ones depending on what is leftover from previous meals - I even made a curried chicken quiche with leftovers!!

I really like the quishe that Eli is suggesting. There is also a egg cream thread in extended. Those can be good quick foods once you get your hang on doing those

I often use pre boiled eggs and make a quick egg salad when I am in a hurry. A boiled egg and a piece of cold cut with mayo can be good stuff.

I make mock danish or egg muffins the night before when I know I have to be somewhere in the morning and am afraid I won't have time to eat my normal breakfast. It's something you can take with you if you don't have time to eat it at home....it only takes a couple minutes in the morning too so you can pop it to cook while you are running after kids and getting hubby ready for work.

There are too many ideas for breakfast (it doesn't have to be eggs -- you can have a salad and leftover meat & veg from the evening before == your choice) - to not eat properly.

Egg Muffins (yield 12 muffins)

10-12 eggs
2 T fat free half and half
1-2 tsp. seasoning

1 1/2- 2 cups diced meat: canadian bacon, ham, cooked turkey sausage or cooked veggie sausage
1 1/2- 2 cups grated low fat cheese (I like sharp cheddar or feta)
Optional, but highly recommended, 3 green onions diced small.

Preheat oven to 375. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray.

In the bottom of the muffin cups layer diced meat, cheese and green onions. You want the muffin cups to be 3/4 full, with just enough room to pour a little egg around the other ingredients. Beat eggs well with the half and half (you could use milk). Pour egg into each muffin cup until it is full to the brim, nearly overflowing. Bake 25-30 minutes until muffins have risen above the rim of the muffin cups and are slightly browned and set.

These freezer well. For best results, thaw in refrigerator before microwaving. I like to wrap them in a paper towel when reheating in microwave to soak up some of the liquid that is sometimes released.

Mock Danish
one serving


2 oz cream cheese (2)
1 large egg, beaten(0.6)
1 packet Splenda(1)
1/2 teaspoon vanilla extract(0.3)

Put cream cheese in a small, microwave-safe dish. Microwave on high for about 1 minute or until softened. Remove from microwave. Stir in the egg, Splenda and vanilla extract into the cream cheese. Put back into microwave and cook on high for 2 minutes.

Total carbs: 3.9 grams
Fiber: 0 grams
Net carbs: 3.9 grams
Cheese allowance: 2
Sweetener allowance: 1

*Note: Cream cheeses vary in carb count. So be sure to check your packages. Also note that some people add a tablespoon of fiber supplement to their Mock Danish to give it a more "bready" (sturdy) texture. If you do this, you MUST include the the fiber supplement carbs.
