| Imitation crab meat isn't allowed on Induction for the reason you mentioned (see the meat footnote in the Induction Acceptable Foods list). It's fascinating how that stuff is made. Basically it's a white fish that is ground up. A bunch of stabilizers and flavorings (like sugar!) are added to it to give it a crab-like taste. The stuff is then molded to look like crab, some red food coloring is added, then it's sliced and packaged. If there's any food out there that's processed, imitation crab fits the bill. If you can get real crab meat, either the lump/backfin or the claw meat. It's a bit more expensive than the imitation stuff, but the flavor is better and you don't have to worry about the additives and stabilizers. Canned crabmeat is suitable too, but the flavor and texture aren't the same to the fresh stuff. (Better yet, if you can get whole crabs and steam them yourself, go for it!) I, personally, cannot eat crabs anymore. I used to be able to eat them, but during my teenaged years, they started giving me really bad stomach cramps. So feel free to enjoy the share of crabs I can't eat anymore.
