But just to clarify. To follow Atkins it is not fine to be over 20 net carb grams. Nor it is fine to eat over 3 cups of veggies. Just for anybody who may be interested a new challenge is starting up very soon called Read the Book I did this challenge last year. It is fun to read the book with other people and find out new and interesting thing about the Diet Here is the sign up: http://www.atkinsdietbulletinboard.c...challenge.html (2009 Read The Book Challenge)

| start eating eggs - each egg counts as (rounded up) 1 carb -- eggs are very versatile - deviled, soft boiled, hard boiled, fried, coddled, etc. Many people eat several eggs daily to get their carb totals up and to keep that full feeling. like others have said - eat more than just lettuce. I take 1 cup lettuce and add 1 cup of veggies such as colored peppers, green onion, cucumber, celery & mushrooms -- also try something like blue cheese or ranch dressing (anything with 2 carbs or less per serving) for additional fat and carbs on your salad. This will make up your 2 cups of "salad" for the day.....Also from time to time I just have celery, cucumber, radishes, pepper strips, etc from the list and eat them in place of lettuce - lettuce doesn't have much nutrition - not like the other veggies I'm mentioned, so I don't base my daily meals around it. Good luck -- find foods with carbs in them.

| check the ingredients in your egg salad -- if you didn't make it check every container before you buy it for hidden sugars.

| Like Carole I often have no lettuce at all but still have 3 cups of 'salad vegetables' - usually red peppers, celery, mushrooms, radishes etc. In fact you could easily do Atkins without touching a bite of lettuce, which is basically chewy water!

| Every Whole Foods makes things differently. In our region (I think they all get some prepared foods from the same source) the egg salad just has celery, scallions and lemon juice. No red pepper. It says that there are 4 carbs in an 8 oz. container. The mayonnaise they use has honey in it. But on the jar of canola mayonnaise which I think is the same brand they use, it says 0 carbs per tablespoon. I think I'm not going to make myself crazy and continue to eat the mayonnaise. My almond milk is Almond Dream Original Unsweetened. I realize, sadly, I can't have it during induction but you all should keep it in mind for later stages because the box says 1g carb per 8 oz - 30 calories. What's the other website to calculate carbs? |
