| Eating more than 3 cups is fine as long as your NET carbs are below 20 g. But you do not have to eat lettuce, unless you want to. Lettuce is fine, but instead of eating an enormous amount of it just because you have carbs left, it is better, from a nutritional standpoint, to eat a variety of veggies.
