| I totally broke away from "breading" when on Induction. Instead, I dusted the outside with a combination of paprika (try hot or smoked paprika) and a little onion and garlic powder then sauteed it in ghee, olive oil & butter or coconut oil. Very tasty. Sometimes I would make a sauce by deglazing the pan with a little broth and adding a touch of cream to it.

| i've read that alot of people use pork rinds...i was going to buy some but never got around to it. i'm thinking of doing my chicken rolled in them. i have a convection oven and i put a chicken on the rotisserie at least once a week..great way to cut the fat from the skin, with a nice tender juicy flavour...just sprinkle with some salt..yuumm..that's what i had tonight. |

| Fat is a big part of the Atkins plan.....read the book so you are doing the plan correctly.

| I can't get pork rinds here, but I dip it in egg or mayo and then roll it in the canned parmesan cheese and some spices. |
