| You don't need a substitute for breadcrumbs, in my opinion. And I would certainly not use pork rinds. Yuck! | Thanks for hte response Georgiana! I know crushed pork rinds don't sound appealing, but they are a great sub for things that call for corn meal or breadcrumbs. And they have no carbs! I used them just last night for breading on fried catfish fillets...yummo! Actually tasted better than cornmeal breaded catfish.. and my husband who is not doing Atkins prefers the pork rind breading over cornmeal! |

| I am SO trying that the next time we have fish! We have an unopened bag of pork rinds at home, and we love Southern fried white fish (orange roughy in particular)! |
