Thumbs up If you are bored with tuna and mayo...

Y'all, I found the yummiest thing this morning....

I was thinking of having tuna w/mayo and a cup of lettuce for breakfast. But I am kind of bored with tuna & mayo.

So I took about 4-5 tablespoons of butter in a pan, melted it, then added 1 can of tuna. I let it simmer and bubble for about 2 minutes. I poured it in a bowl and took a spoonful....

guess what? Tastes just like mom's TUNA CASSEROLE from when I was a kid (minus the noodles and peas and potato chip crumbles on top). Yummy-licious! You gotta try it!

It sounds gross, combining tuna and butter, but it's not - it's really good.

Also, I find that I have come to LOVE the taste of butter, whereas before Atkins, I didn't like butter and preferred the taste of margarine.

P.S. - it's good if you take a forkful of the hot tuna and butter, then stab some lettuce - delish!

Yes, and you can also make tuna patties. They are fantastic. I love tuna. Combine tuna, eggs, chopped celery, chopped onion, chopped green peppers and mashed pork rinds. Make into burgers and cook in butter. Delicious.

MMm sounds delicious all these tuna ideas...I eat tuna for lunch everyday that I work, its quick cheap and easy...what else can I ask for...lol

My husband makes the typical tuna/mushroom soup/noodles/cheese variety with the chips on top. I am fanatical about this.

What if, for atkins sake, I took a batch without the noodles and chips? Just the cheese, mushroom soup, and tuna? Maybe crumbled pork rinds on top?

Thoughts?

Hmm - the soup has 9g of carbs per serving...but a serving of the casserole would only have a portion of that. Well, gotta give it a try.
