| Yes theyre okay but only on the Legumes rung! Ive been searching for them everywhere and can never find them!!

| I found them at safeway by the veggie dogs and burgers. Bottom shelp. That section, in my safeway, is in the produce isles. |

| Tofu is induction-friendly, so these should be induction-legal as well. You can also buy shiritake noodles that do NOT have tofu and are made with glucomannan only. Shiritake noodles have a fishy odor right out of the package, but don't let that discourage you. They have a chewy texture and will take on the flavor of whatever you cook with them. Boil them for 10 minutes or so to get rid of the fishy odor, and then add them to whatever you are cooking. I've eaten them like spaghetti--after boiling and draining the noodles, I add them to marinara sauce and top them with mozzarella and parmesan. You could also add them to stir fries, soups, whatever you normallly would have that contains noodles.

| As an ex-pasta addict, I ate the heck out of the shiritake noodles for a while in induction & OWL. I gradually lost my taste for them, although I forsee eating them occasionally in the future. They were a good transition food for helping me stay on Atkins when I really wanted some noodles. As JuliRama stated, you can do just about anything with them. After straining and rinsing them, I boiled them for about 8 minutes in chicken broth or bullion, with a little dill. Our local Jewel carries them in the organic section (they are refrigerated) and the health food stores usually have them. |

| These sound good - I am not a tofu fan, but I might have to give them a try. Of course - I'm a HUGE fan of Dreamfields pasta

| Emma - I get mine from http://www.mountfuji.co.uk/ They do taste a bit rubbery though. The ones that are part glucomann/konnyaku and part tofu (which btw would be induction-legal as Dr A allowed 'soy cheese' which = tofu) are supposed to taste more like 'real' pasta but I have not been able to find them in UK.

I can tell they are something I will be able to eat often with the right sauce or broth, but I can only see these going with an oriental-type of recipe. I personally can't see them as a substitute for spaghetti... maybe I'll try it though.... |
