It depends on the difference in price. If you grill a pound of meat that's 15% fat and the loss of fat and evaporation of water now gives you a 8 ounce hunk of grilled meat; and you grill a pound of 95% lean 5% fat and you get a 14 ounce hunk of meat. but the difference in price is only a few cents per pound, then the leaner makes more sense. If there's a big difference in price, than the cheaper, higher fat meat makes more sense.
Personally, I like a fatty hamburger, but don't want grease floating in my chili....... so I go by that
