Question I'm on day 42 and I have a veggie question is driving me nuts

I re read the book this morning because I was on the boards yesterday as I had plateaued for 3 weeks but that changed this morning Yaahhh.
In reading the book I realized that I had only been eating from the salad list because the idea of subbing 2 cups of salad for 1 cup of veggies somehow made feel like I would be missing out on food.
Yeh, I know I have got past that!

My question this morning is practical.
How do I measure one cup of cooked broccoli, cauliflower, asparagus or brussels sprouts?
Do I cut it up the cooked veggie and put it into a plastic measuring cup or just drop the florenteen (sp) in the cup to measure one cooked cup?

I am not sure what you mean by 'subbing' two cups of salad veg for one cup of veg!?!

We can have 2 cups of veg from the 'salad veg list' plus one cup from the 'other veg list', or 3 cups from the 'salad veg list' if we dont have any from the 'other veg list'.

that said, if you are cooking the veg you need to measure it raw to get your one cup then cook it.

Measuring something like brocolli in a measuring cup is tricky, so I use the weight instead. Soliwit made a list of the weight in grams of one cup and parts of a cup of all the induciotn vegetables which I refer to often. Here is the link to it http://www.atkinsdietbulletinboard.c...p-measure.html (Weights of vegetables per cup measure)

If you dont have a scales to weigh it and dont want to chop it into small bits to cram into a measuring cup you can use the 'Archimedes' principle to find out how much broccoli equals one cup.

The simplest way to do this need a large measuring jug into which you put more than enough water to cover the vegetables.

Start with making a note of the amount of water in the jug (without the veg in it). I would put water to maybe the 2 cup line to make this easier. Then carefully add brocolli or brussels sprouts etc till the water reaches the 3 cup mark. You will have added one cup's worth of your veg.

Thank you.
I was not sure if we were allowed to chop up the cooked veggies (not salad) before we measured them.
