| I am in the same boat... I like Broccoli, Cauliflower, and green beans, I can handle a little spinach, but from the can.. All of the other vegetables everyone else mentions...I couldn't do. No.. Celery, peppers of any kind, mushrooms are a big no no, cucumbers, radishes, bok choy, zuccini, squash, the list could go on and on. Good Luck, let me know if you find something you like.

| Just a suggestion... I have found my tastes have changed dramatically since I went on Atkins. Some things - like eggs and milk - I disliked before, and I dislike now. Some things - cheese and cabbage and zucchini - I disliked before, but I like now. I don't like Pumpkin but I'm going to try some this weekend, because all of a sudden it's starting to appeal to me/ The only way to know is to try it - and try it different ways. I like cabbage raw and cooked (stir fried) but not boiled. I like zucchini stir-fried lightly but no other way. Perhaps after some time on Atkins, you'll find that you like things you didn't like previously too! |

| Hi Gel, I've never really liked mushrooms much... my best friend loves them so maybe she can cook some for me and I will try a little. I am trying to be open-minded on this diet lol! ImREADYImREADY, I feel your pain! Although I don't mind cucumbers or celery. They both have a very mild taste to them. Thank you Skeptika. I've noticed a little change in my appetite. I am willing to try zucchini since I use to eat it fried before this WOE. Guess I will have to just suck it up and try stuff little by little! Thanks for everyone's responses |

| The first time I was on this diet, I tried a bunch of veggies like asparagus & salad greens that I HATED before, like with a passion. The only veggie I enjoyed before that was corn & obviously, I can't really have that right now. :P But now I'm a crazy salad addict - took awhile to find a dressing I liked though (when I was younger, i was all about Thousand Island, now I can't have anything but Italian!). But all I had to do was try it, with a bunch of different dressings - and ta-dah! I started eating them One of my old landladies used to marinate vegetables too. She had a bunch of veggies I hated like celery & such, and marinated them in italian dressing overnight - they didn't even taste like veggies anymore, they tasted like my salad! It was awesome! I was shocked that she managed to prepare veggies I actually enjoyed. I also looooove stir-frying. The other option of course is to "sneak" tiny bits of veggies into other stuff you eat. Chicken breasts with alfredo sauce & little bits of asparagus or something sprinkled all over it? Not bad. Meat loaf with a few extra veggies like peppers & onions mixed into it? Helps a bit. Not a huge serving obviously, but it can get you used to the flavor & texture in little steps, so you ease up into more obvious veggies in your meals. |

| I micro asperagus with garlic salt and then rub them with butter and some parmesan cheese - yummy (also my favortie thing with broccoli and brussell sprouts) Cook a piece of bacon to crisp and add a bit of chopped onion (not too much lots of carbs in onion) and then put in fresh spinach or blanched swiss chard with a pinch of salt (I love chard) and cook until softened. YUMMY! What's the trick to turnips? I tried them this sumemr roasted like feaux potatoe wedges and they were AWFUL. Maybe it's an aquired taste. I like most veggies except cooked carrots and peas (lucky for me they are a no no) but turnips turned me off.

| To get kids to like new foods they need to taste it about 6 times before they decide that they like it. So be like a kid and taste all the different kinds of veggies at least 6 times each before you write it off. Make sure you are seasoning with chicken broth, salt, pepper, garlic, etc... and start trying different herbs as well. You might be surprised what's good together. You need to get 2 cups of salad veggies every day in addition to your 'other' veggie which is 1 cup on induction. Good luck. and have fun with it! Trader Joes has all kinds of wonderful premade dips that are made with sour cream and they also make a onion and chive whipped cream cheese thats yummy with celery. liz |
