If you check the recipes in DANDR, you will see that a serving of ground beef is about 6 oz (it only appears in one recipe, I believe). And for chicken about the same. I'm in Europe and we don't have (or I never saw, at least) 16-oz steaks here. A serving of ground beef for us is typically 4-5 oz and chicken is 4-6 oz.
Now, on Atkins, if you are hungry, you can eat more than that. But don't eat a 10-oz steak in one go, because 5 oz might be enough to satisfy your hunger. Eat 5 oz, wait for at least 20 minutes, then if you are hungry eat a bit more, wait again, if you are hungry eat more, wait again.... and so on until your hunger is satisfied.
