    Default coconut bread

    Ok I found a coconut bread recipe and tried it but it stays really flat and dense. I saw a prepared bread made with coconut flour that looked really good, and had the same basic ingredients as what I made but used vinegar along with the baking soda. I'm thinking about toying with this, but I'm not sure to go about it. Have any of you used baking soda and vinegar to make fluffier breads?

    Back to high school science class!

    Baking soda + vinegar will chemically react to form water, salt, and carbon dioxide. The carbon dioxide will form bubbles in the liquid.

    If the reaction occurs inside, say a flour batter, the carbon dioxide will form bubbles in the batter.

    Does the recipe also ask for baking powder?

    The recipe asked for baking powder but it didn't get very fluffy. The pre-made bread looked a lot better but used baking soda and vinegar instead. Having never used it before I'm just not sure how to much of either to use per say cup of flour?

    The problem with baking powder or even baking soda is it has to be fresh. These products have a tendency to go stale (meaning they would form carbon dioxide bubbles). So if your baking powder has been hanging around your cupboards for a while, you should test it.     Thanks for the reply, I can't do the wheat gluten at the moment. I'm cooking double batches when I do bake, and giving part of it to my mother who has celiacs. I'll test my baking powder and see if it's the problem
