Use regular Cheddar.
In most recipes, you can substitute it with whatever aged cheese you like. For example, I can't find Cheddar in Germany, so whenever a recipe asks for Cheddar, I am using Gouda.
American chedder cheese is a mixture of colby and chedder. A little softer and smoother then what you'd normally think of as chedder. Someone might have called it "real" so that it would be noted they weren't talking about "American Cheese". American Cheese of course being the name given to just about any processed "cheese" product. Those cheese products typcially melt very well, but wouldn't be good for cheese crisps because they don't harden up like real cheese does.
