• Help-needed-Atkins-Induction Menu examples-

    Dear Atkineers and ADBBers

So I was thinking having an article on our front page with a typical induction menu would be helpful and interesting.

People new to the diet often need a crutch to hang on to. And here on our home page may be a good place to feature one
So would you help me put one together? We can try to get as many days up as we feel like.

Just add suggestions in this thread and off we go. It does not have to be very fancy - maybe some items that you are having or had or wished you had
If you are not sure about carb counts and other details, don't worry we will figure it out. How say you all? Help some new atkineers out.

Add a meal/snack in or a day or what ever you feel like and we will make a a full menu out of somehow.

So I'll start maybe something like this

      Something like this

      2 eggs scrambled (0.7)
      2 tsp of butter (0)
      1 mushroom (0.4)
      1 green onion (0.7)
      2 strips of sugar-free bacon (0)
(total carbs for breakfast 1.7, veggie carbs 1.1)

I am day 5 of induction and this is what I have had so far today:

coffee with 1 tbl of half and half

eggs with 1/4 cup of cheddar cheese, 1/4 cup of spinach
      2 pieces of bacon

hamburger patty with cheese, mayo wrapped in lettuce

I will not have any more cheese today...and I think dinner is going to be taragon chicken in a cream sauce with some broccoli and a side salad.

Snack will be hardboiled egg and olives

      Carole you rock.

This so helpful because I can really not think of enough stuff by myself

I will show you guys what I have in a couple of days when I have worked some more on it.

So more ideas would be super welcome

Also if you guys take pictures of stuff and have some recipes and foods that you have photographed I still am collecting stuff for the recipe section of the from page.

      Liv,

      what is boot camp?

oh and I have not forgotten about taking pics of the food I cook (lol). I did move the camera to the kitchen! It is usually HECTIC around here at dinner time, but my family would get a kick out of taking pictures.

      Hello

      How about this one....

1cup of zucchini made into noodles (zoodles by using a grater and making them long like spaghetti)

then you make some boneless chix breast and a sauce like alfredo using some heavy cream, some butter, some parmesan cheese (frankly i only make sure the cheese is as much as Im alotted otherwise I dont measure). pour the sauce onto the zoodles..yum!

I am still keeping this in mind and I will finish the sample menu. So ideas are much appreciated.
Now I want to make the zucchini alfredo.

      Lunch:

      Spicy Cajun Tuna Salad

      Dinner:

      Chicken Kabob
      Garlic Dip
      Salad

      And mucho H20...

sorry about all the questions but I love your ideas but I need to add a net carb count when I make up the menu (which I am still planning to do btw)

I stuck to flavors that I still craved from many of the foods I used to eat.

I loved Szechuan food and Mexican food. I made over a couple of recipes that I used to have so I could continue to enjoy the flavors, but made them induction friendly. When I craved Mexican food, I made a simple Taco Salad with hamburger and spices and some sugar free stewed tomatoes. That, some greens and a little shredded cheddar and sour cream and I had my spicy treat, healthier than I could have it anywhere else.

Instead of using commercially available Szechuan sauce or getting take out, I made Szechaun sauce with induction friendly items. My homemade sauce with a protein and veggies, I had the flavors I wanted without the carbs. I haven't eaten rice or noodles when I prepare this dish since.

IrishIrish: I am curious about how you made your own szechuan sauce?? It sounds amazing! I too make my own sauces for stir-fries and such using ingredients like fish sauce, soy sauce, sesame oil, and stuff like that...I also use either the cauliflower "rice" or zoodles (zucchini noodles) for my stir-fries.

I literally have a list of Atkins meal ideas that I refer to while making my menu for each week. I find that if I plan, the plan works! So as I make my menu, I copy and paste items from my meal ideas list to the menu...swapping out the old with the new...You can download templates for meal planners and such in Microsoft Word. Most of my recipes or recipe idea's ultimately came from the forums here or Linda's place!
      .
      .
      A few Ideas:

      • Meatzza Pie (hamburger patted out to be like a pizza crust and topped with pizza toppings)
      • Kebabs (skewers w/ any meat, any veggies allowed...use oil, salt & pepper, and basil)
      • Steak w/ loaded cauliflower (mashed cauli mixed w/ crm cheese, grn onions, cheese, bacon and baked)
      • Fajita Salads (Any meat cut into strips and cooked w/ ground cumin, green peppers, onions and put on salad with sour cream, avocado, cheese and salsa)
      • Salmon Patties (uses onions, egg, pork rinds, parmesan and fried in butter)
      • Green Enchilada Chicken (sauce on top of breasts: crm cheese, mayo, green chili's and baked)
      • Cabbage Stir-fry (fry up some burger till almost done, add cabbage, onions, fish sauce, sesame oil, and red pepper flakes)
      • California Chicken Salad (butter lettuce w/ grilled cajun shrimp, avocado, green onions, and dressing made w/ olive oil, lemon juice, and pepper)
      • Oopsie Sub Sandwiches (oopsie roll made longer, and regular sub fillings)
      • Stuffed Bell Peppers (bells stuffed with precooked burger and either cooked cabbage slaw or shredded cauli...then a sugar free seasoned tomato sauce over top and bake with cheese on top)
      • Beef Stew (cubed beef, turnips cubed, celery, onion, beef broth, any color bell pepper, and cooked till thick...works well in crock pot too if you don't add too much broth)
