I wonder why this recipe needs to be in pan of water. I've never heard of that before for a cheesecake. Anyone know?

Cooking in a pan of water helps keep the cake moist. Without the water, the top would get dry and crack. This is a very common procedure when working with dry type batter.

my girlfriend just mad a cake with this same exact recipe for her family but she used splenda instead of sugar cause they wnt know the diffrence. only problem is she put 3 tbs of flour into it. should i eat this or should i not

I halved this recipe to just try it.. I am making it into a chocolate cheese cake by taking one packet of diet hot chocolate and adding it to the mix along with 1/2 tbsp of cocoa baking powder. I also left out the lemon since I was making it chocolate.

Will let you know how it turns out.

I know adding the diet hot coco makes this one not legal for induction but I am past the dairy rung.
