Default Induction Friendly Coconut Pie

I really enjoy coconut and I know some people don't but this is a great way to get your veggies (believe it or not...you have to read on) you will be surpised at the ingredients.

INGREDIENTS


  • 1 1/2 tsp liquid splenda
  • 3 eggs
  • 1/4 cup butter, melted
  • 1 tablespoon lemon extract
  • 1 tablespoon coconut extract
  • 1 teaspoon sugar free vanilla extract
  • 3 cups cooked, shredded spaghetti squash
  • 1 pinch ground nutmeg (optional)
  • 1 pinch ground cinnamon (optional)


DIRECTIONS
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Beat the splenda and eggs together in a mixing bowl until light and frothy. Beat in the butter, lemon, coconut and vanilla extracts until well blended. Stir in the spaghetti squash. Pour the mixture into a greased pie pan. If desired, dust the top with nutmeg and cinnamon.
  3. Bake the pie in preheated oven until a knife inserted in the center comes out clean, 40 to 45 minutes. Cool on a rack before serving.
DaVinci's sugar free made with splenda syrups may be substituted for extracts and you can mix heavy whipping cream with a little splenda and vanilla extract for whipped topping.

Please let me know what you think and if one of you guru's can figure out carbs for me I would appreciate it. I never really tried to figure out carbs because I knew one slice fills me up and there wasn't that many in it.

Oops make sure you cook the spaghetti squash first and chop/cut it into smaller pieces...

Hey i love your post !! my mouth is watering already !! I added your recipe on Fitday to check out the carb content etc. I added vanilla instead of coconut extract because i could not find it. Also it does not seem to have splenda, so i just added sweetner.




3 whole eggs – 2 arbs

Butter has 0 carbs

Lemon juice 1

Vanillas extract 2

Squash cooked 3 cups 30

Nutmeg 1

Cinnamon 2

Sweetener 4



Total calories 2676, total fat 272, total carbs 41, and total protein 23


It does seem a bit high in carbs but i guess if you divided it into 6 servings, it would be about 6.8 carbs (approx). I know that squash probably forms the bulk of the dessert but i will try to make it with less if it, to cut down on the carbs.

I plan to make it soon and i will try to post a pic too !

oh i didnt notice you said it has 8 servings , so that will be about 5.12 carbs per serving

I choose to use Lemon Extract instead of Lemon Juice, so that deducts one carb for the lemon juice.

Coconut Extract (I just got mine at Wal-Mart) in the spice aisle.

Nutmeg and Cinnamon are optional so you don't have to have them if you don't want to. (lower carbs a bit more) does a pinch really have 1 carb?

So I suppose you could make it much lower than 5 per serving with a few more tweeks and omissions. I wonder with all the squash what the fiber content would be. Overall net carbs etc.

Thanks for putting all that in. Having 5 carbs for me in a slice of something like this is heaven. Steak, salad and a piece of pie...nummy!

I never thought about putting a picture up? What a cool idea.

I don't have liquid splenda. I only have granulated ....is there an equivalent measurement? thanks!

1 1/2 tsp liquid splenda sounds like a lot of sweetness. If it's Sweetzfree, 1/4 tsp. = the sweetness of 1 cup sugar.
