Default Orange Cream Cups [needs improvement]

I made these a few days back but there were a few kinks I need to work out.

I'm trying to cut out aspartame so I made my own 'home-made' lowcarb "Jello"

Ingredients:
2 packets of Knox Gelatin
2 cups of water
1 cup heavy cream
Half of a packet of Orange Kool-Aid
8 packets of splenda [you may want more, mine were a bit tangy]

In a small bowl I added 1 cup of boiling water and the two packets of knox gelatin. I mixed it to dissolve the gelatin and set it aside.
Then in a mixing bowl I added the kool-aid, splenda, and 1 cup of boiling water.
Then I added the gelatin/water to the mixing bowl and the cup of heavy cream. I thoroughly mixed it, and even whipped it a little to give it a big of fluff, then poured the mixture into three ramekins [small dessert bowls].

They turned out great but I did notice a few things:

At the top the mixture had a perfect creamy texture, but towards the bottom it was a little bit more like "Jello". I'm guessing this is because I whipped it and the air bubbles floated up as it thickened.
It was also a bit higher in carbs than I wanted. I estimate about 5 to 5.5 per ramekin. I think in the future I may use liquid splenda instead to shave off about 2 carbs.

That sounds heavenly right now. I will plan on making it tomorrow. I bought gelatin and kool-ade but haven't used any yet.

I'll use liquid sucralose (splenda). And I don't think I'll mind the two layers... will make it more interesting looking.

Try using cream cheese softened in the place of some of your cream.

I made these today and they are wonderful!!!!!

Mine are fluffy and creamy all the way through. I did them a little differently.

First, I dissolved the gelatin and a whole pack of orange koolade in 1 cup boiling water. Then, after it was dissolved, I added another cup cold water with a few ice cubes and stirred until the ice cubes had melted. Then I added 12 drops of liquid Splenda.

In a separate bowl, I whipped the cream, then gradually whipped in all of the orange mixture a little at a time.

Then I poured them in bowls and chilled them.

Hubby and I both loved them!!!!

Thanks so much for motivating me to try this!

That sounds like a great way to keep everything thoroughly mixed and fluffy! Next time I make these I'll do 'em your way!
