Talking ~ Revolution Pumpkin Spice Muffins ~

Revolution Pumpkin Spice Muffins

~ Induction Friendly ~

4 egg whites
1/8 teaspoon cream of tartar
4 egg yolks
1 teaspoon granular Splenda or equivalent liquid Splenda
1/2 teaspoon Pumpkin Pie Spice
1 teaspoon Vanilla Extract
3 ounces cream cheese, softened or I have used 3 ounces of Cottage Cheese also & it works just as well

Whip the egg whites and cream of tartar until stiff. Then blend the egg yolks, Splenda, salt,pumpkin spice,vanilla and cream cheese until smooth. Gradually fold the yolk mixture into the egg whites being careful not to deflate the whites. Spray a Muffin Pan with cooking spray. Divide the mixture into 6 muffins about 1/4 cup each. Bake at 350º 30 minutes or until lightly browned on top and slightly firm to the touch. Cool in the muffin pans for a few minutes then cool completely on a wire rack. Store in an airtight container in the refrigerator.

Makes 6 muffins

I serve them warm or cold, cut in half with a little soft Butter or Cream Cheese!!!

Per Muffin: 97 Calories; 7g Fat; 5g Protein; .5g Carbohydrate; 0g Dietary Fiber; .5g Net Carbs or 1/2gram Net Carbs

Please Note: I used my Mini Food Processor to whip the Eggs Whites & then transferred them to a glass bowl. I then used the processor to blend the rest of the ingredients, which I added to the Eggs Whites it made things a lot easier!!!

Have you tried making these with mayo - I kind of like saving my cheese "ration" for other things

make sure if your on induction you don't use cottage cheese -- it's not allowed until the dairy rung.

Hi Liv,

Are you saying one can acutally replace the 3 ounces of cream cheese with 3 oz's of mayo and it actually works!?!?!?!

Another question I have is...what is "pumpkin spice" is it cinnamon and nutmeg or is there something out there that actually is called that?

That would be awesome if thats the case, I'm allergic to dairy so I'm not able to try the recipes out that call for cream cheese....now if I could only replace the cream cheese in cheese cake with mayo

I am not an expert revolution roll maker though. So my "fine" may not be yours. But I think mayo works very well for a "cottage cheese" substitute. I have not tried to make them like Cindi does in muffin tins as a sweet treat. I make mine savory and without sweetener to use for burgers. And I use 3 tablespoon
Here is Atkins 1972 revolution roll recipe

3 tablespoons of cottage cheese [this is where I substitute with 3 tablespoons of mayo]
1/8 teaspoon cream of tartar
3 eggs, seperated
1 pack of sweetener (he said sugartwin)

Pumpkin spice that is something you buy? Right Cindi? I usually use my own mix of cinnamon and nutmeg

That's terrific, thank you Liv!!! Btw...if you don't put yours into muffin tins, do you simply take a spoonful (like a dollup) and drop it onto a cookie sheet and cook? Also, what temp. do you cook them for that way and for how long?

This looks good. I have yet to try any of the "revolution" recipes. I thought this would have actual pumpkin in it....hmmm...
